Hand hygiene is important both before and after any interaction with a suspected COVID-19 patient. It is common sense EMS practice to wash hands and wear surgical gloves for each patient interaction.
When wearing gloves, be cognizant of the surfaces you touch. For example, opening a cabinet, opening a bag, grabbing a hand rail, buckling a seatbelt, etc… Any surface that you touch should be properly disinfected.
